Summer Mille-Feuille Recipe – 218kcal – 5 Minutes Prep

1 Fibre One 90 Calorie Lemon Drizzle Square, 1 small strawberry, 5 tsp half fat crème fraiche, 1 to 2 drops vanilla extract, 5 to 6 blueberries.

Cut strawberry in half, leave leaf on & reserve half for garnish. Remove the green from the other half & thinly slice. Cut the Lemon Drizzle Square in half. Place one half on a plate. Mix crème fraiche with the vanilla. Spread with 1 tsp of crème fraiche mixture. Top with strawberry slices. Spoon 3 tsp of crème fraiche mixture over strawberries. Top with blueberries & the other half of the Lemon Drizzle Square. Spoon the remaining crème fraiche on top of the Mille Feuille, & add strawberry half. Serve straight away.

Tiramisu with coffee Liqueur – 178kcal – 5 Minutes Prep

1 Fibre One 90 Calorie Salted Caramel Square, 1 tablespoon cold strong black coffee, 1 teaspoon coffee liqueur (optional – see tip), 3 level tablespoons light mascarpone, 1 pinch cocoa powder, for dusting

Mix the coffee and coffee liqueur together in a small shallow dish or saucer. Place the Salted Caramel Square in the coffee mixture, and leave to soak for 30 seconds. Turn over and repeat. Transfer to a serving plate. Mix the mascarpone with any remaining coffee mixture, and spoon over the Salted Caramel Square. Dust with cocoa powder, and serve.

1 Fibre One 90 Calorie Chocolate Fudge Brownie, 15g white chocolate chips, 1/2 teaspoon pastel coloured sugar sprinkles

Insert a wooden lollypop stick into one end of the brownie. Place the white chocolate chips in a small microwave-proof bowl and cook on High for 20 to 30 seconds until just melted, stir until smooth. Spoon the melted chocolate over the top half of the brownie and scatter over the sugar sprinkles. Chill in the refrigerator for a few minutes until set.

High Fibre Smoothie Bowl – 533kcal – 10 Minutes Prep

1 Fibre One 90 Calorie Lemon Drizzle Square, broken into small pieces, 1 medium banana, 150g strawberries, stems removed, 70g raspberries, 60g blackberries, 200ml apple juice, 1 tablespoon mixed seeds (such as sunflower and pumpkin seeds), 10g whole hazelnuts, halved

Place the banana, 100g of the strawberries, 50g of the raspberries and 25g of the blackberries in a blender with the apple juice. Whizz until smooth. Pour into a serving bowl. Slice the remaining strawberries. Arrange strawberry slices, the remaining raspberries and blackberries, and lemon square pieces in rows on top of the smoothie. Scatter with the mixed seeds and hazelnuts. Serve straight away.
