Vegan Apple Crumble Apple Mixture: 2 lbs (~5-6) apples, peeled and diced or sliced, 2 tbsp Let's Do Organic Cassava Flour, 2 tbsp fresh squeezed lemon juice, 1/2 cup sugar, 1/2 tsp ground cinnamon Crumble: 1/2 cup Cassava Flour 3/4 cup rolled oats 1/2 cup brown sugar 1/2 tsp ground cinnamon 6 tbsp vegan butter, cubed Instructions: Mix together the cut apples with the 2 tablespoons cassava flour, lemon juice, sugar and cinnamon. Transfer to a cast iron skillet or casserole dish. In a mixing bowl combine the cassava flour, rolled oats, brown sugar, and cinnamon. Add the vegan butter and crumble it with your hands until it's combined and there is little to no dry mixture left behind. Top the apples with the crumble. Bake at 350 ºF for 45-60 minutes, or until the apples are tender, the juices are thick and bubbly, and the top is crispy and golden. Enjoy warm with vegan vanilla ice cream! | Paleo Vegan Banana Flour Brownies Ingredients: 3/4 cup (105g) coconut sugar, 3/4 cup (185g) almond butter, 2 flax eggs (2 tbsp ground flax + 4 tbsp water), 4 oz (110g) dark chocolate, melted, 3/4 cup (180g) almond milk, 1 tsp vanilla extract, 2/3 cup (80g) Let's Do Organic Green Banana Flour 1/4 cup (20g) cacao powder, 1 tsp baking powder, 1/2 tsp salt, 1/2 cup (80g) chocolate chunks, 1/2 cup (55g) chopped walnuts Instructions: Preheat the oven to 350ºF. Whisk together the coconut sugar, almond butter, prepared flax eggs, melted chocolate, almond milk, and vanilla (everything should be at room temperature or warmer, otherwise the chocolate will seize up and make it hard to mix). Process until you have a dough and scrape down the sides as you go. Add condensed coconut milk in once finely processed to help the mixture stick together. Roll dough into three different sized balls to create your snowmen and then roll the balls in shredded coconut. Assemble balls on on a cake stick.
