The first known recipe for duck à l'orange dates from the nineteenth century; in The French Cook, Louis Eustache Ude refers to it as ducklings à la bigarade (bitter orange) and serves it with citrus sauce. Duck à l'orange, whatever its origins, remained a classic throughout the twentieth century, and beyond. Castaing's duck a l'orange jar holds enough for one portion and is made with French duck meat. It's best to reheat it in a bain-marie. Produced without preservatives or artificial colours. Maison Castaing, founded in 1925, is a true ambassador of French gastronomy. This family business, established in the Landes a few kilometres from the birthplace of its historic founder Joseph Castaing, is part of the South-West culinary tradition.
