Sun-Dried Tomato Chicken Salad

1. Put the chicken breasts into a non-metallic bowl. Add the pot of Dolmio Pasta Sauce Stir-In Sun-Dried Tomato. Cover and refrigerate for at least 30 minutes.

2. Pre-heat the grill. Arrange the chicken breasts on the grill rack and cook for about 6-7 minutes per side, basting often with the Dolmio sauce. Check that the chicken is thoroughly cooked with a sharp knife. Cool the chicken whilst making the salad.

3. In a large salad bowl, mix together the olive oil, lemon juice and wholegrain mustard. Season with black pepper. Add the lettuce, cucumber, cherry tomatoes, red onion and pepper. Toss to combine.

4. Tear up the chicken breasts and add to the salad. Sprinkle the pine nuts on top, then serve whilst the chicken is still warm.
