Goose rillettes are produced with goose meat that has been enhanced with goose fat, garlic, salt, pepper, and shallots. They are the ultimate simple but rich treat, prepared to a traditional recipe by French company Castaing, who are well-known for their duck and goose products. Serve these rillettes with fresh bread or with acidic onion jam, sour cornichons, or pickled vegetables. These goose rillettes have a long shelf life and can be kept in the fridge for a few months before serving at room temperature. Joseph Castaing established Maison Castaing in the lovely village of Coudures, south-west France, in 1925. The company is renowned for its , pâtés, terrines, and ready-made sauces. The business is still run by Joseph's descendants, who provide the flavours of the Landes region to foodies around the globe.
