HOW TO EAT THEM: Those who frequent Japanese restaurants will surely have found them as an appetizer or in some sushi preparation. They're so tasty that one pulls the other! They can be cooked like peas and broad beans to recreate vegan recipes such as soy burgers, vegan bacon, medallions of dehydrated soybean mince or veg stew. Black soya can therefore also be used as a "basic ingredient" as well as a legume. A HEALTHY TOUCH: These pure soybeans are excellent as a side dish, rich in properties and proteins. The black soya bean are much more valuable than the yellow one for its very limited cultivation, moreover it is distinguished by the black pigmentation of the outer skin (inside it is yellow too) and by a lower fat content. it has a high content of proteins, unsaturated lipids and lecithin, a substance that enters the cell membranes, known for its emollient and antioxidant properties. HOW TO EAT IT: Its texture is buttery and the taste is reminiscent of hazelnuts, with a vaguely sweet note, it can only be eaten cooked or steamed. You can eat this food as it is, with a light dressing, or use it for tasty salads. You can also use them as a veggie burger, vegetable steak, rolls, vegetable rags, tofu, seitan and whatever stimulates your imagination in the kitchen. BLACK BEANS : Black soybeans are very similar to dried black beans, so much so that they are often confused but, black beans and black soya beans are not the same thing. In common they only have the characteristic black colour. They are a very popular snack of Japanese and Chinese cuisine perfect for creating tasty recipes such as meatballs, ragu and meatballs.
