Ingredients - Chickpea & Vegetable Stir Fry

1 Garlic Clove, crushed
2cm piece of Fresh Ginger, grated
1 Red Chilli, deseeded and chopped
400g tin of Chickpeas, drained and rinsed
1 Red Pepper & 1 Carrot cut into matchstick pieces
80g Mangetout & 2 Spring Onions, sliced
1tbsp Soy Sauce & 1tbsp Teriyaki Sauce
1 pouch of Ben’s Original Microwave Rice

Total Time: 25 min

Instructions - Chickpea & Vegetable Stir Fry

Add 1 tbsp of sunflower oil to wok & when smoking, add garlic, chilli & ginger. Stir constantly.
Add the pepper, mangetout and carrot and stirfry until they begin to soften.
Add the chickpeas, soy and teriyaki sauce and mix through to coat the vegetables.
Continue to cook for 3-4 minutes to heat the chickpeas through.
Meanwhile, heat the Ben's Original microwave rice according to pack instructions.
Split the rice between two bowls & top with the stir fry. Sprinkle with sliced spring onion and enjoy!
