Our Balsamico di Modena is made by a third-generation producer according to the strict EU laws of Protected Designation of Origin (PDO) and Indication géographique protégée (PDI).

Density is crucial to understanding premium balsamic. As a rule of thumb, the lower the density, the more acidity on the palate. For example, our famous 1.34 Balsamic Vinegar, which is 34% thicker than water, is stickier and sweeter, perfect for drizzling directly onto salads, strawberries and ice cream, whilst a 1.25 Balsamic Vinegar, which is 25% thicker than water, is thinner and more acidic and more suitable for deglazing and dressings.
