Cinnamon Provenance Cinnamomum zeylanicum (Ceylon or true cinnamon) was discovered by the Portuguese in Sri Lanka in 1505. True cinnamon is also found in South India and Madagascar however other origins are likely to be cassia. Cinnamon is an ancient spice revered in legend and history. Egyptians used the spice as a perfume during embalming, Roman Emperors burned it on their funeral pyres and the famous Greek Herodotus recounted a story of giant winged serpents guarding cinnamon in their mountain nests.	Cinnamon Usage As only the inner bark is used for Ceylon cinnamon, it is a high quality, highly prized spice. Revered for its unique flavour and aroma qualities, cinnamon is widely used across the world in many cuisines. Sweet baking is its most common application in buns, cakes, cereals, pies and cookies. However in Turkish, N. African, Indian and Persian cuisines, cinnamon is used in savoury dishes like tagines, chutneys, pilaffs, stews and curries.	Bart Cinnamon Quality Tan-brown in colour and formed of tightly coiled quills these fine, soft layers provide a highly desirable quality and texture which is contrasted to the thick, rough bark of cassia. Due to its lower cinnamaldehyde content Ceylon Cinnamon has a milder aroma and flavour than its more common cousin cassia. Ceylon Cinnamon also contains almost undetectable levels of coumarin, unlike cassia, so if you use cinnamon frequently, you should use Ceylon Cinnamon.
