Fusilli in their current form first appeared in southern Italy and originally came from the idea of winding spaghetti on a knitting needle. Only later, due to the different taste habits in the different Italian regions, did Fusilli emerge as an independent variety.

Fusilli with Vegetable Carbonara

Finely chop the green part of a leek, place in a colander, season with salt and let rest for 15 minutes. Wash to remove the salt, drain and dry with paper towel. In a non-stick pan, saute the leek in olive oil for a couple of minutes.
Beat 2 eggs together with some Parmesan cheese, pepper and nutmeg. Drain the pasta, reserving 2-3 tbsps of cooking water.
Toss pasta and vegetables together and set aside. Off the heat, add the egg mixture and cooking water for a creamy consistency. Serve and enjoy!

Penne Rigate with Barilla Pesto Genovese and Fresh Salmon

Cut the salmon into cubes of 2cm, heat some olive oil in a non-stick pan and gently cook them for a few minutes.
Drain the Penne Rigate al dente, keeping 2-3 tbsp of cooking water aside; put the Penne in the pan, along with the salmon and stir gently.
Take the pan off the heat, add the Barilla Pesto Genovese and the cooking water, toss together. Serve and enjoy!

Penne Rigate with Asparagus and Pecorino Cheese

Add a chopped onion and asparagus to a non-stick pan and saute gently.
Cut some tomatoes into wedges, lengthways, and break up with the prongs of a fork. Combine with the fried mixture, season with salt and cook for 10 minutes.
Melt some grated Pecorino cheese in a bowl with a ladle of pasta cooking water and a generous pinch of black pepper. Mix well
Drain, when the pasta is al dente. Toss and stir well with the veggies in the pan. Take off the heat and pour in the Pecorino mixture. Serve and enjoy!
