No Ordinary Malt Vinegar

Artisan Malt Vinegar isn’t any ordinary malt vinegar. Made with the finest Maris Otter malt and Cornish spring water. Naturally fermented, oak-matured for years, then drawn straight from the barrel – live, unfiltered and unpasteurised. The result is a mellow acidity, with mouth-filling, rounded flavour. Artisan Malt Vinegar brings a touch of class to chips, but it can also be used wherever you might use a fine wine or balsamic vinegar: ideal for dressings, marinades and sauces, as well as sublime chutneys and relishes. It is equally at home on the delicatessen or grocery shelf, as a beautiful addition to the restaurant table, or as an ingredient in the fine-food kitchen.

Artisan Raspberry Vinegar

Some flavours are unmistakable. Put on a blindfold, and you’d be surprised how many flavours are hard to identify – but not raspberry. That big raspberry flavour comes all the way through into Artisan Raspberry Vinegar.

You’ll find other raspberry-flavour vinegars out there. Some of them are made by flavouring a cider or wine-vinegar base. Not ours – Artisan Raspberry Vinegar starts life as whole rasps – nothing else!

Artisan Cider Vinegar

The apple varieties which you find in small, traditional Cornish farm orchards are different to those you find elsewhere – varieties have been developed to handle the Cornish climate. So, we use Manaccan Primrose, Cornish Aromatic, Cornish Breadfruit, Tregonna King, English Codling, Hoary Morning.

We press our own fruit. The juice makes a strong, dry cider which, eventually, transforms into vinegar. We barrel mature this in oak for at least a year, letting the flavours develop before bottling. You’ll find Artisan Cider Vinegar strong, with big apple flavour and aroma, and a good hint of oak.

Artisan Blackberry Vinegar

The most unlikely of our vinegars, we very nearly gave up on making this after our first few attempts. Live blackberry vinegar loves to turn to jelly, it turns out, and it took us a long time to get this product ready for market. In spite of the difficulty we had to persevere - the flavour is like nothing else, and we hope you'll enjoy it as much as we do!

Artisan Damson & Sloe Vinegar

To make Artisan Damson & Sloe Vinegar, we gather a range of small plums – from orchard damsons, through slightly smaller bullaces, to the tiny, sharp wild sloes. Most come from the orchards and hedgerows on our own farm.

Artisan Honey Vinegar

The key to making Artisan Honey Vinegar (formerly Artisan Mead Vinegar) is to start with the best quality honey - cheaper honeys contain little flavour once the sugary sweetness has been converted to vinegary acidity. All of ours comes from local beekeepers whose bees range over the coasts, moors, hedges and wild-flowers of Cornwall. After the vinegar-making process has stripped away the sugars, converting them first into alcohol, and then into acid, what is left is a distinct and aromatic floral flavour balanced against the bite of the acid.

Artisan Strawberry Vinegar

We get all of our fresh strawberries from Trevaskis Farm. We pulp them down to a beautifully sweet strawberry juice, ferment that into a beautiful rose wine, then put that through our vinegar making process to create a flavourful, fragrant and surprisingly sharp vinegar, barrel matured to really bring the fruity flavour and aromas through.
