Featured Recipe: Oatmeal Breakfast Bars

Pour 1-2/3 cup of water and 1-1/3 cups Arrowhead Organic Gluten-Free Steel Cut Oats into medium saucepan. Bring to boil, then drop heat and simmer for about 12 – 15 minutes, until oatmeal is thick and water is absorbed. Pour oatmeal into large mixing bowl. In food processor, buzz 2 cups of dates, 2 cups dried apple slices, and 2 cups of pecans. Add buzzed fruit and nuts to oatmeal and stir in 1 cup no-stir almond butter, 2 tbsp. of cinnamon, and 1 tsp. of salt. Pour mixture into 9x13 baking dish. Let mixture cool, then cut into bars and wrap in plastic wrap or wax paper. Store bars in refrigerator. Serve and enjoy at any time!
