Antonio's Raw Certified Organic Eucalyptus honey is a really beautiful tasting honey; it has a wonderful creaminess along with a mild menthol after-taste. Suitable for all ages as it is not overbearing in any way or too subtle. This is a very beautiful light tasting tree honey. It has a smooth menthol taste with a hint of fruitiness. It comes from bees feeding on eucalyptus trees in the Mediterranean area. It is slightly different from most blossom honey as it has a more prominent taste. It shares characteristics with herb type honey, such as thyme, as it is creamy and sets in a similar manner. This particular honey is a deep shade of orange amber and when set it turns to a creamy light brown. Eucalyptus honey is a beautiful variety with a unique composition, it contains traces of eucalyptol which gives it a fresh revitalizing taste. Its essential oil is often used in aromatherapy as a decongestant and antiseptic. This variety of eucalyptus honey comes from Eucalyptus trees north of Madrid in the lowly populated area that lies between northern Spain and the centre (where Madrid is). Eucalyptus honey is often used in skin care. It has a fresh clean aroma and its soothing composition helps aid skin recovery from blemishes, acne and spots. It is also extremely versatile in different recipes, such as: a glaze for meats, cakes, flapjacks, breads and teas. This honey is made by the bees of Antonio Simone, a 4th generation bee-keeper who takes pride in producing his honey in a traditional way without adding or taking away anything. Antonio's hives are based in the mountain ranges of north of Madrid, his bee-keeping practices and the land his hives are on have been certified as organic by the Committee of Organic Agriculture in Madrid. RAW HONEY NATURALLY CRYSTALLISES OVER TIME. If yours has crystalised and you prefer it runny, place it on a radiator and drape a tea towel over it. Leave it overnight. The heat will not damage the honey, the important thing is that you don't heat the honey beyond 40 degrees (the hive can get this hot in Summer).
