It shares characteristics with herb type honey, such as thyme, as it is creamy and sets in a similar manner. This particular honey is a deep shade of orange amber and when set it turns to a creamy light brown. Eucalyptus honey is a beautiful variety with a unique composition, it contains traces of eucalyptol which gives it a fresh revitalizing taste. Its essential oil is often used in aromatherapy as a decongestant and antiseptic. This variety of eucalyptus honey comes from Eucalyptus trees north of Madrid in the lowly populated area that lies between northern Spain and the centre (where Madrid is). Raw honey naturally crystallises over time. If yours has crystalised and you prefer it runny, place on a radiator and drape a tea towel over it. Leave it overnight (longer if necessary). The heat will not damage the honey, the important thing is that you don't heat the honey beyond 40 degrees (the hive can get this hot in Summer). If the radiators are very hot then put something like a thin book under the jars and then drape a tea towel over them. It can take up to two days to fully liquify.
