Tahini Chocolate Chip Cookies

Ingredients:

  • 2 cups of Anthony's Sesame Seeds
  • 1 T of oil
  • Sprinkle of salt
  • 1 egg
  • 1 cup of Anthony's Coconut Sugar
  • 1 cup of chocolate chips

Directions:

  1. Preheat oven to 350 degrees F.
  2. Add the sesame seeds to a skillet and cook over medium heat. Stir frequently until golden.
  3. Place the golden sesame seeds in a food processor and process until a butter has formed (3-4 minutes).
  4. Stop the processor and add salt.
  5. Turn on processor and slowly add the oil - process for 1 more minute until a smooth tahini has formed
  6. In a bowl, combine coconut sugar, egg, and tahini (approximately 1 ¾ cups) and stir until a dough forms.
  7. Next, fold in the chocolate chips
  8. Scoop the batter into 12-15 cookie balls and place on a baking sheet
  9. Place the cookie sheet in the oven and bake for 15-20 minutes or until the cookies are golden
  10. remove the cookies from the oven and allow them to cool for 10 minutes
  11. Store leftovers in an airtight container

Sesame Butter

Ingredients:

  • 2 cups of Anthony's Goods Sesame Seeds
  • 1 T of oil
  • Sprinkle of salt

Directions:

  1. Add the sesame seeds to skillet and cook over medium heat, stirring frequently.
  2. Cook the sesame seeds until they turn golden. Watch the sesame seeds carefully because they can burn quickly.
  3. Once the sesame seeds are golden, place them into a food processor. Process the seeds until they start to form a butter consistency (approximately 3-4 minutes).
  4. Stop the food processor and add the salt.
  5. Turn the food processor back on and slowly add the oil.
  6. Process the tahini until smooth (approximately 1 more minute).
  7. Store the tahini in the refrigerator.

Process Time: 5 minutes
Total Time: 15 minutes
