Für die Herstellung dieses Zuckers wird das Zuckerrohr zunächst durch Walzen gepresst. Der so gewonnene Zuckerrohrsaft wird zu Sirup eingekocht, getrocknet und fein vermahlen. Es findet keine chemisch-physikalische Raffination statt, d.h. Sirup (Melasse) und Zuckerkristalle werden nicht voneinander getrennt. Im Gegensatz zum Rohrohrzucker wird er nicht weiter behandelt, sodass die Mineralstoffe des Zuckerrohrs teilweise erhalten bleiben.
