What is Fine Brown Bulgur?

Fine Brown Bulgur (also called "bulghur" or even "bulghul") is a whole-grain product made from hard red winter wheat berries. To make it, hulled wheat kernels are processed to remove a small amount of the bran, then steamed, dried and cracked to a fine grain.

The difference between yellow/white and brown bulgur:

Yellow Bulgur: It is the most common variety of bulgur wheat in the world. Yellowish colour is due to its raw material and durum wheat's natural colour.

Brown Bulgur: Brown bulgur is produced from red wheats. It is softer but has a stronger taste to the yellow bulgur.

What Does It Taste Like?

Bulgur has the nutty flavour of many whole grains with a similar chewy texture and an appealing popcorn scent when it cooks.

How to Cook Aksoy Fine Brown Bulgur Wheat?

Place a cup of Aksoy fine bulgur into a large bowl and

pour 2 cups of boiling hot water over it.

Let it soak for 10-12 minutes.

The cooking time for fine bulgur should be no longer 12 minutes but feel free to taste

  • You can serve it with yogurt, hummus or kind of meze.

MAKE A VEGAN TURKISH CIG KOFTE (VEGAN MEATBALL) WITH WALNUT

Aksoy fine brown - make a vegan kofte

Ingredients:

  • 1 cup of fine(brown) bulgur
  • 1 cup mush potatoes, 1 sweet paprika grated(red pepper)
  • 1 cup Ground walnuts
  • 1 cup tomato paste(salca)
  • 1/2 glass isot (dark chilli pepper), 1 tbsp Turkish red pepper flakes, 1 tsp black pepper
  • 4 garlic cloves finely diced, 1 lemon
  • ½ cup extra-virgin olive oil, ? cup Pomegranate Molasses,
  • pinch of cinnamon, pinch of cumin, 1 tsp meatball spices, 1 tsp salt (add more if desired)
Tips for shape;

  • Wear kitchen gloves or
  • Moistening hands with either olive oil or water.

Instructions:

Cig Köfte(pronounced chee kofta, Turkish)

  • Peel and cube the potatoes. Boil until soft, drain, and grate.
  • Add the bulgur, potatoes and olive oil to the bowl of a stand mixer with a paddle attachment and mix briefly until just combined.
  • Prepare the ingredients if you have, put them through the food processor for vegetables. Thoroughly mix all the ingredients except for mush potatoes and the set-aside fine bulgur.

  • To this mix, gradually start adding the bulgur, and begin kneading to roughly combine everything for a few minutes, ideally on a large tray. If using hands for kneading, use your palms to push the mixture down into the tray, over and over again until it gets much softer and sticks together.
  • After a satisfactory taste-test, begin shaping them by taking a two-tablespoon portion into your palm, leave some space between your fingers, and make your hand into a fist.
