Our Founding Story

60 years ago we planted olive trees in our family groves surrounding the mystical Ancient Olympia. As the trees matured, they nourished three generations. We founded PJ Kabos as a way to share their goodness with people who were seeking a healthy, pure way of eating.

This is one of the highest phenolic content in the world for a true Extra Virgin Olive Oil. Take a sip. You feel that burning sensation at the back of your throat and that bitter taste on your tongue? It’s all the good-for-you antioxidants working their magic. Our evoo packs quite a punch!

Consuming evoo is all about improving your health and doing so in the most natural way. This is why all of our products are strictly Non GMO, Chemicals, BPA and Pesticides Free.

Supportive but not conclusive scientific evidence suggests that daily consumption of about 1.5 tablespoons of oils containing high levels of oleic acid, may reduce the risk of coronary heart disease.

481 mg/kg during production using the only method which the international olive council goes by, it is called HPLC. If we used another testing method, the results could be much higher.

High Vitamin-E content: 4.2mg/Tbsp (28% DV).

High Hydroxytyrosol content: 5mg/20g (during production).

Tasting characteristics

Aromas of cut grass, artichoke, basil and notes of tomato stem. Taste exhibits abundant fruitiness, medium bitterness and pungency with notes of arugula, flowers, mint and green almond. A high persistence and complexity.

Our groves are located in the western Peloponnese region of Greece, very close to the site of Ancient Olympia. Since ancient days, olive trees have thrived in the climatic conditions offered by this mythical area and EVOO has always had a protagonist role in everyday life.

Cold Extracted

The precious oil is extracted very shortly after the fruit is cut from the tree. Absolutely no chemicals or heat are used during the process so as to preserve all valuable nutrients.

Vegan & Vegetarian

Our production process is 100% animal-free so you can pour to your heart’s delight knowing that our beloved animals can enjoy licking up our oil as much as we do.

Koroneiki Olive Variety

This variety is cultivated around the Western Peloponnese and is known for its high quality and aromatic oil. Its characteristic “green” taste is internationally renowned and perfectly complements most foods.

Hand Harvested

We harvest the olives in October/November when the fruits are still green in color. Although this gives a very low and costly yield of around 10%, it helps us achieve our desired very high antioxidant levels and delicious, medium intensity taste.

Our Loving Approach

 

  • Mindfully Sourced All of our olives come from either our private groves or other small, family run farms. We strive to maintain the traditional olive groves that have been a part of the Greek landscape for thousands of years and not destroy them to replace with super high density groves.
  • Consciously Crafted Absolutely no chemicals are used during the process of extracting the oil from the fruit, a procedure which is accomplished through the use of centrifugal force (gravity).
  • Cruelty Free Our sense of responsibility, care and respect for the earth encompasses all creatures, big and small, that live on it; it is our mission to help and protect them.​
  • Organic We go to great lengths to ensure that all of our extra virgin olive oils are free from harmful pesticides.
  • Plant Protection and Nurturing We use organic compost instead of chemical fertilizers for our family groves. Also, we never use organophosphate pesticides in order to control the olive fly, but instead only fly traps with natural deterrents, such as natural talc and sugar water.

Our production process is committed to supporting the ancient hand harvesting techniques and maintaining the planting methods that have been used in Greece for centuries. We do not use heavy machinery to harvest the olive fruit or support the conversion of traditionally planted olive groves into super high density olive groves.

Commitment to Giving Back

Your every purchase helps us support the environment, local harvest workers and family producers. We are pleased to cover the annual harvesting costs for select local producers. This way, we give them the opportunity to work and grow their ancestral olive groves, just as their predecessors did, and help them provide for their families.
