This Oolong tea is named after the Chinese Goddess of Mercy "Guanyin", a female embodiment of the Buddha also known in Japan as Kannon and in Korea as Gwan-eum. A number of spellings appear in English, all referring to Iron Goddess oolong tea - spellings and names include "Ti Kuan Yin", "Tit Kwun Yum", "Ti Kwan Yin", "Iron Buddha", and "Tea of the Iron Bodhisattva", or abbreviated as "TGY". When first developed Tit Kun Yam was so highly prized that the exact process needed to produce it was kept secret. Now the secret is out and the whole world can enjoy Iron Goddess of Mercy Oolong. This caddy contains 150g of lightly baked Tit Kun Yam in the modern style, similar to Formosa Oolong from Taiwan. It produces a flowery, fresh delicate aroma and a mellow, relaxing taste with a smooth mouthfeel. It brews to a light green jade color, closer to green tea than the darker Oolongs. To brew, add freshly boiled water to a cold ceramic vessel, then add a full teaspoon for each person. Allow to brew for about 3 minutes, remove the leaves and enjoy the floral aroma steaming from your mug! Oolong has medium caffeine, but this tea is good enough for re brewing, and a second infusion will produce a similar flavour but with a reduction in caffeine content of around 80%.

A mellow, smooth drinking oolong, perfect for a relaxing afternoon cuppa. This lighter oolong brews a jade green colour, almost like green tea, but with out it's astringency. Tie Gun Yin translates as "Iron Goddess of Mercy" - a famous type of oolong in China. A lightly roasted Oolong tea with a floral aroma and a smooth, mellow flavour.
